Preparation
Mix the yolks and salt in the beer
Add the flour until it forms a thick "porridge"
In a separate bowl beat the whites of the eggs to the point of turron
Gradually add the beaten egg whites to the "porridge" (with enveloping movements)
Marinate the filetitos with lemon, salt, pepper and garlic for 20 minutes.
Insert the filetitos into the "porridge" until they are completely bathed.
Fry the fillets in plenty of oil.
Drain the fillets on napkins to remove excess grease
