Ingredients: 2 tablespoons vegetable oil, or olive oil for the sauce; 1/4 onions, for the sauce; 1 clove garlic, for the sauce; 5 tomatoes, in quarters, for the sauce; 1 apple, in cubes, for the sauce; 5 morita chiles, for the sauce; 1 cup orange, only the pulp, for the sauce; pinches salt, for the sauce; pepper, for the sauce; 2 tablespoons vegetable oil, or olive oil for the fish; 4 fish fillets; pinches salt, for the fish; pepper, for the fish; orange zest, for the fish; orange, for garnish; lime, for garnish; avocado, for garnish; parsley, for garnish

Heat a skillet with vegetable oil and add the onion, garlic, tomato, apple, morita chili, and sauté for a few minutes, add the orange pulp and continue cooking for 5 minutes. Blend what you cooked, add salt and pepper. Set aside. Pour a little vegetable oil into a skillet over medium-low heat, add the fish, season with salt, pepper, and orange zest. Cook for 10 minutes.
