Buy the fish without entrails and fresh. To know if the fish is in good condition, the eyes should be clear and the gills a bright red color. The more noticeable this is, the fresher the fish will be. Place the fish on a board and scrape each side with a knife at a 45° angle to remove the scales, always from the tail to the head; do it in one smooth motion and always towards the same side. Afterwards, remove the fins, both lateral and those on the top and bottom, with scissors.
