Ingredients

6 portions
  • 1 grouper fillet, of 3 kilos open in the middle, without the spine
  • 200 grams achiote
  • 1 cup orange juice, sour
  • 3 güero ppeppers, cut along
  • 2 green bell peppers, or red, cut into slices
  • 3 tomatoes, medium, sliced
  • 2 red onions, sliced
  • 1 tablespoon oregano
  • 1 bottle beer
  • 1/4 cups olive oil
  • salt, and pepper to taste
  • 1 leave banana, passed by the flame to wilt

Preparation

The fish is washed thoroughly and dried with absorbent paper, salted.
The achiote is dissolved with the sour orange juice and the fish is very well spread, it is left to rest for three hours.
It is placed on the banana leaf and the chili strips are placed on top, the green peppers, the tomato, the purple onion, the oregano, it is bathed with the beer and the olive oil and the pepper is wrapped in the banana leaf and roast over charcoal until the meat is soft and crumbles easily.
It can also be done in the oven, in which case the fish wrapped with the banana leaf is placed in an oven tray and baked at 175ºC for 45 minutes or until it is cooked, occasionally bathing it with its juice.

PRESENTATION

If it is done on the embers it is placed once ready in a baking tray lined with fresh banana leaves and from there the diners are served. If it is baked it can be placed in a large clay dish lined with fresh banana leaves,
