The fish tacos are delicious. Prepare them almost at the moment of serving them to avoid the tortillas from getting watery and the fish from being crispy on the outside.

4 portions
  • 1 cup flour
  • 1 1/2 teaspoons garlic salt
  • 3/4 teaspoons cayenne pepper
  • 1 cup dark beer
  • 1/3 cups ketchup
  • 1/3 cups mayonnaise
  • 1/3 cups natural yogurt
  • 1 kilo white fish, in semi thick cut
  • 1 jet lemon juice
  • to taste oil, to fry
  • flour tortillas
  • to taste pico de gallo, (at your service)
  • to taste lemon, in quarters (to serve)
  • to taste cabbage, thinly sliced (to serve)

In a bowl, combine the flour, 1 teaspoon garlic salt, and 1/2 teaspoon cayenne pepper. Add the beer and with a balloon whisk beat until smooth. Cover and steep for at least 10 minutes to 1 hour.
Prepare the sauce, mix the castup, mayonnaise and yogurt. (You can add a little marinated chipotle juice)
Marinate the fish. Cut the fish into long pieces (about 10 cm) and put in a bowl with the lemon juice, 1/2 teaspoon of garlic salt, and 1/4 teaspoon of Cayenne pepper. Stir and marinate for about 10 minutes.
Heat the oil. In a pot fill about 2.5 centimeters of oil and let it reach 190 degrees of temperature.
Meanwhile, heat the tortillas. Keep under a warm cloth or napkin.
Add the fish to the beer mix and fry the fish in the oil. Dip each piece in the mixture first and then in the oil and let it brown, about 7 minutes. Avoid touching the pieces of fish so that they do not stick together. Scoop out of the oil and put on kitchen paper to absorb the extra fat.
Once all the fish has fried, assemble the fish tacos. Put on each tortilla a couple of pieces of fish, pico de gallo sauce, cabbage, and the prepared mayonnaise sauce.
Serve with sliced lemon and avocado.
