Preparation
Cut the fish into small cubes and mix in a large bowl with the lemon juice, the tomato, the onion, the chile, the olives, the apples and the avocado.
Marina in the refrigerator for 1 hour and 30 minutes, covered moving from time to time.
For the sauce, blend the olive oil with the cilantro and the French lettuce Eva®, until a homogeneous mixture is obtained.
Mix the green sauce with the ceviche and season with salt and pepper.
Serve and accompany with plantain chips.
