This fish recipe is cooked on the grill and served with a mango salsa with pineapple, chile and a hint of orange. With this range of tropical flavors you will go crazy to all who try it. Addiction to a unique flavor.

Ingredients

4 portions
  • 2 mangos, mature
  • 3/4 cups pineapple, cut into pieces
  • 3 tablespoons red onion, thin slice
  • 1 serrano pepper, without seed and well chopped
  • 1/4 cups orange juice, cool
  • 1 tablespoon lemon juice
  • 1/4 cups fresh coriander, or finely chopped mint
  • to taste black pepper
  • 500 grams White fish, (halibut) cut into 4 portions, without the skin

Preparation

Cut the mangoes into squares, they should come out as 1 and a half cups.
In a bowl, mix the mangoes, pineapple, onion, chili, orange juice and lemon juice. Add the cilantro and 1/4 teaspoon of salt. Season with pepper and let stand for 20 minutes.
Heat the grill on high heat.
Season the fish fillets with salt and pepper.
Put the fish with tongs on the hottest part of the grill, turning it over 1 time after 5-7 minutes on each side.
Serve the fish with the mango sauce on top.

PRESENTATION

To get grill lines in the form of crosses, rotate the steaks 45 degrees after 3 minutes on each side.

TIPS

The firm fish, like Dorado, Mahi Mahi or Halibut, are ideal to make on the grill as they are firm.
