Ingredients

4 servings
  • 2 cups of Water
  • 1 tablespoon of Salt
  • 1 Cup of quinoa
  • 1/2 piece of red onion finely chopped
  • 1/2 Cup of fresh parsley finely chopped
  • 1/2 Cup of peppermint fresh, finely chopped
  • 1 Cup of cherry tomato cut in halves
  • 1/2 Cup of lemon juice
  • 4 spoonfuls of olive oil
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 1 teaspoonful of olive oil
  • 4 pieces of fish fillet
  • 1 piece of yellow lemon
  • 1 piece of cucumber cut into sheets, to decorate

    Preparation

    Heat the water in a pot, add salt and quinoa. Cook on low heat, covered 20 minutes. Reservation.
    In a bowl combine quinoa with purple onion, parsley, good grass, cherry tomatoes, lemon juice and olive oil. Season and reserve.
    Heat the olive oil in a grill pan. Cook the fish until it is cooked. Take care that it does not fall apart.
    Serve the fish with the yellow lemon, the slices of cucumber, accompany the salad and enjoy.

    PRESENTATION

    Serve the grilled fish with slices of yellow lemon on top and serve with the quinoa salad and decorate with cherry tomatoes and parsley leaves and fresh cilantro
