In a non-stick skillet, heat the olive oil with the butter over medium heat and cook the shallot with the fresh parsley, season with salt and pepper, and cook for 5 minutes. Add the lobster tail and cook for a couple of minutes, add the white wine and let it come to a boil, then cook for 5 more minutes or until the lobster tail is cooked. Chill.
