Preparation
Peel the carrots and split them in 4 or 6 along. Cut the ends of the green beans and leave them whole. Steam the vegetables in salted water for 15 minutes.
Rinse the fillets and dry them thoroughly with an absorbent napkin. Put olive oil, salt and pepper on 2 sides.
Arrange the vegetables at the ends of each fillet (protruding) roll the fillets and hold them with a wooden stick.
Put the rolls in a refractory stuffed with a little olive oil and bake for 8 minutes at 350ºF.
To make the sauce, melt the butter, add the cream, sugar and paprika and stir over low heat.
Put this hot sauce on the steaks at the time of serving.
