Peppers Stuffed with Tuna and Sardines

This stuffing of tuna with sardines is perfect to highlight the taste of Piquillo peppers, besides being a light dish, very nutritious and easy to prepare.

Ingredients

4 portions
  • 170 grams tuna
  • 3 sardines, in olive oil
  • 6 gherkins, bittersweet
  • 4 tablespoons light mayonnaise
  • 2 teaspoons capers
  • 2 teaspoons parsley, chopped
  • 2 tablespoons lemon juice
  • 10 pickled onions
  • 1 can piquillo pepper
  • to taste salt
  • to taste black pepper

Preparation

Drain the tuna and sardines. Chop the sweet and sour pickles in vinegar. Chop the onions in 4.
Drain the peppers and have them ready to be filled. In a bowl, grind the tuna and sardines with a fork.
Add pickles, onions, parsley, lemon juice and mayonnaise. Mix well and put capers, salt and pepper.
Try it and if you need to add more lemon. Fill the peppers with care and arrange in a dish.

PRESENTATION

It can be accompanied with a green salad.

Be careful when handling the peppers as they are delicate.
