Preparation
Seed and devein El Guapo® California chile pods and arbol chiles.
Using a comal, roast the chiles with onion, garlic and whole black pepper until aromatic and lightly browned. Remove and soak chiles in hot water until softened.
Blend the soaked chilies with a little of the liquid, and the ingredients that you previously roasted, the chipotle, Heinz® ketchup and the salt until you get a homogeneous sauce.
Heat the vegetable oil in a saucepan over medium heat and simmer the sauce for 10 minutes.
Warm a deep sauté pan over medium heat, add the butter and cook the onion and garlic until translucent. Add the shrimp and cook until they barely change color, season with salt and pepper. Pour in the sauce, cook a couple of minutes more. Serve with white rice and cilantro.
