Ingredients

4 portions
  • 4 red snapper fillets, without skin
  • 1/4 teaspoons White pepper
  • 2 tablespoons olive oil
  • 2 tablespoons olive oil, for the sauce
  • 1 clove garlic, chopped
  • 1/2 onions, filleted
  • 3 tomatoes, in small cubes
  • 1 cup mashed tomatoes
  • 1/2 cups red pepper, Roast, lemon and small cubes
  • 1 Cube Knorr Tomato® Tomato Seasoning
  • 2 leaves bay (laurel)
  • 1/2 cups green olive, rinsed and sliced

Preparation

Season the fish with pepper on both sides.
Heat 2 tablespoons of olive oil in a pan and brown the fish fillets on all sides. Reserve.
For the sauce, heat the remaining oil and fry the garlic with the onion. Once they are soft add the tomato cubes and cook for 2 more minutes.
Add the tomato puree, the peppers, the Knorr® Tomato cube and the laurel; cook on low heat for 5 minutes or until the tomato is well cooked.
Add the olives, the fish fillets and cook for 3 more minutes or until the fish is soft and well cooked.
Serve with white rice.

TIPS

Add güero chiles in vinegar.
