The day before, prepare the crumble dough: Mix the flour, salt and slightly melted butter to obtain a paste easy to crumble. Place it in a bowl, cover it with transparent paper and put it in the fridge.
The next day, preheat the oven to 180 ° C (thermostat 6). Put butter on the bottom of a cake mold. Crumble the dough and put it in the oven for 10 minutes. Let it rest.
Heat the oven to 210 ° C (thermostat 7). Spread butter in 6 individual dishes.
Wash and dry the salmon fillet and cut it into pieces. Season them. Distribute them in the dishes.
In a bowl, mix the fresh cream, the juice of 1/2 lemon, the mustard and the chopped dill and toss it on top of the salmon cubes. Put it in the oven for about 6 minutes.
