Preparation
For the hamburgers, in a bowl mix the salmon with the cilantro, the scallion, the dijon mustard, the yolk and the ground bread, mix everything until completely incorporated.
Form hamburgers and reserve.
Heat a pan over medium heat and add the oil, fry the burgers and cook until they are cooked. Drain on absorbent paper.
For the sauce, blend the avocado with the cilantro, the lemon juice, the jalapeños, the sour cream, the salt and pepper.
In a pan heat the oil and cook the portobelos about 5 minutes. Season with salt and pepper, reserve.
Place a bit of the avocado sauce, the hamburger, the portobellos, the tomato and decorate with a little watercress in a hamburger bun.
