Presentation

Serve a piece of salmon over a bed of white rice and top with a bit of pesto. Accompany with the remaining pesto in a bowl.

Tips

Before seasoning the salmon, make a few small cuts in the skin to prevent it from shrinking while frying. If you have leftover pesto, you can store it in the refrigerator for three more days and use it to dress salads or sandwiches.
