Salmon is a very nutritious fish because it has a high content of Omega-3 and is high in protein and calcium. This recipe is rich and low in fat.

Ingredients

4 portions
  • 500 grams Salmon, (fillet)
  • 1 onion, chopped
  • 2 cloves garlic
  • 4 tablespoons olive oil
  • 20 asparagus
  • 1 can artichoke
  • 1/4 cups almond, in pieces
  • 2 tablespoons rosemary
  • to taste black pepper
  • to taste salt

Preparation

Preheat the oven to 150 degrees Celsius.
In a deep bowl, mix the chopped onion, crushed garlic, rosemary and olive oil.
Put the salmon fillet in a large baking dish. Marine with onion sauce and olive oil. Season with salt and pepper
Bake for 15 minutes.
Meanwhile cook the asparagus and artichokes in a pot with 1 tablespoon of oil for 10 minutes.
Remove the salmon from the oven and put the vegetables and almonds in pieces. Bake for 4 more minutes.

PRESENTATION

Serve the salmon on a large platter and decorate with the asparagus and artichokes.
