Peel the potatoes and cut them into thin slices, which will then serve as the basis for the accompaniment of our baked salmon.
Chop the onion into small pieces. Open the peppers, empty them and once they are clean, cut them into slices.
Later, we prepare a frying pan with olive oil and we are ready to fry, one by one, all the ingredients that we will later add to the dish. It is important to control the potatoes and remove them just before they are browned, since they will end up next to the salmon in the oven.
Chop the garlic and parsley and mix with a little oil and vinegar to prepare a light sauce that will accompany our fish later. We cut the two tomatoes into small pieces and, once all the ingredients are prepared, we select one of our sources and we anoint it with olive oil. Then we should only place the food in layers, following this order: first the potatoes, secondly the chopped onion and the slices of pepper and thirdly the pieces of tomato. Finally, we salted the salmon fillets and placed them on top of the rest of the ingredients.
We heat the oven to 220 degrees of temperature and introduce the source inside for 5 or 6 minutes. Then, we remove the source and sprinkle the fish with the garlic and parsley sauce. Finally, we return our salmon to the oven and, once we check that it is well cooked, we remove it and serve it.
