Salmon in Almond Crust with Avocado

If you are a fan of salmon, do not hesitate to prepare this incredible recipe for breaded salmon fillet with a crunchy almond crust, accompanied by a creamy avocado and basil sauce. Incredibly delicious!

Ingredients

4 portions
  • 3/4 cups almond, toasted and sliced
  • 2 tablespoons ground bread
  • 1 tablespoon Dried oregano
  • to taste salt and pepper, white
  • 1 teaspoon onion powder
  • 2 tablespoons Margarina Primavera® Special Oils Coconut and Almonds, (tub 170 g)
  • 4 salmon fillets, 200 gc / u
  • 1 avocado
  • 1 clove garlic, small
  • 2 tablespoons goat cheese
  • 1 tablespoon fresh basil leaf
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh dill
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • to taste lemon zest, to garnish

Preparation

Preheat the oven to 180 °C. (350°C)
Process the almonds in a food processor to obtain a fine powder. In a bowl, mix the ground almonds with the ground bread, the oregano, the salt, the white pepper, the onion powder and the Margarine Primavera® Special Oils Coconut and almond until you get a dough texture.
Season the salmon fillets and cover with the almond dough crust, place in a baking tray.
Bake about 15 minutes or the desired term. Remove from the oven and set aside.
For the sauce, process the avocado with the garlic, the goat cheese, the basil, the parsley, the dill, the lemon juice, the olive oil, the salt and the pepper.
Serve the salmon fillets with the avocado sauce and garnish with yellow lemon zest.

PRESENTATION

Serve the salmon with the avocado sauce and serve with a green salad.

TIPS

The cooking time of the salmon will depend on the term you want it to have.
