Shrimp with Tamarind Sauce

Ingredients

4 servings
  • 400 grams of jumbo shrimp peeled and deveined
  • 1 Cup of tamarind syrup or sauce
  • 4 cloves of garlic
  • 1/2 onion chopped
  • 1 tablespoon of fresh ginger chopped
  • 2 spoonfuls of sugar
  • 10 heads of green onion
  • 1 tablespoon of vegetable oil
  • to taste of black pepper

    Preparation

    In a pan heat over medium heat 4-5 tablespoons oil and brown the onion for 2 minutes or until translucent.
    Add the garlic and ginger and brown for 1 minute more. Add the onions and mix.
    Finally add the shrimp and cook for 2 minutes.
    On the other hand, mix the tamarind syrup with the sugar and season with salt and pepper. Pour the sauce over the shrimp and cook for 2-3 more minutes, making sure to overcook the shrimp.

    PRESENTATION

    To serve with a bed of Mexican rice or white rice.

    TIPS

    A secret with shrimp is to cook them at high temperatures very quickly, if they are overcooked they get to be gritty so it is very important not to over cook them.
