Ingredients: 1/4 white onions, roasted, for the marinade; 1 clove garlic, roasted with shell, for marinade; 1/2 cups chipotle chile in adobo sauce, for marinade; 1 tomato, roasted, for marinade; 1/4 cups water, for marinade; 1/4 cups orange juice, for marinade; 1/2 kilos shrimp, clean and shelled; 1/2 cups lime juice, for marinating; 1/2 teaspoons salt; 1/2 teaspoons pepper; 1 tablespoon olive oil; 1 tablespoon butter; 1 tablespoon garlic, finely chopped; 1 pinch salt

For the sauce, blend the onion with the garlic, chipotle peppers, tomato, water, and orange juice until you achieve a smooth sauce. In a bowl, place the shrimp with lime juice, salt, and pepper, and marinate for 5 minutes. Reserve in the refrigerator.
