  • 1/2 heads garlic

  • 1/4 cups evaporated milk

Season the fillets with salt and pepper, in a pre-heated pan add half of the butter bar and a drizzle of olive oil to avoid burning the butter, as soon as the butter starts to melt but without being consumed they are added the fillets until golden brown avoiding that they fall apart and remain very fried. In a pre-heated pan add the other half of the butter bar with a drizzle of olive oil, to avoid burning, clean and cut into small pieces the 1/2 head of garlic, when the butter begins to Melt until they caramelize, immediately add to the blender, add the cream, the evaporated milk, the chipotle, the chicken cube, salt and pepper to taste and liquefy, Reserve.
The fillets are taken with care, they are opened in half without breaking them and stuffed with shrimp, served with vegetables and bathed in chipotle sauce.


Accompany this dish with a Chardonnay wine.
