For the chipotle mayonnaise, in a bowl, use a spoon to mix the mayonnaise with the ground chipotle, salt, and pepper until fully combined. On a cutting board, cut the tuna into small cubes and place it in a bowl. Add the soy sauce, sesame oil, orange juice, lemon juice, and ginger. Marinate for about 10 minutes.
