Preparation
Boil a large pot with water, 2 tablespoons of salt and cook. Once boiling cook the pasta for 5-6 minutes or until it is almost al dente.
Preheats the oven to 180 degrees Celsius.
In a medium saucepan melt the butter over medium heat, add the flour and incorporate with a balloon whisk. Cook for 1 minute more. Add the milk and continue beating until it starts to boil, reduce heat and cook for 5-10 more minutes or until the sauce thickens.
Remove the sauce from the heat, add the manchego, the cheddar and mix until they melt and incorporate. Add the cauliflower puree and continue mixing. Season with salt and pepper.
Mix the pasta with the cheese sauce.
Make a muffin tray (8) with butter and divide the pasta between the 8 muffins, top with the grated Parmesan cheese.
Bake the pasta for 15 minutes, remove it from the oven and allow it to cool 2-3 minutes before unmolding.
