Cut the sausage in half and make a long incision. Cut the manchego cheese into thin strips, keeping in mind that they are for stuffing the sausages. Stuff the sausages with the cheese and wrap them all along with the slices of bacon. Bake at 180°C for 5 minutes or until the bacon is well browned and the cheese is melted. Serve and accompany with ketchup, mayonnaise, or hot sauce.
