In an Express Pressure Cooker® over high heat, add the oil. Add the chicken, 2 cups of water, salt, and carrot. Close the Express Pressure Cooker® and put on the pressure regulator, place it on the stove over high heat, when steam starts to escape, reduce the heat to medium and cook for 35 minutes.
