Ingredients

8 portions
  • 1 cauliflower, cut into small pieces
  • 1 cup watermelon, cut into small cubes
  • 2 cups jicama, cut into small cubes
  • 2 serrano peppers, finely chopped
  • 1 cucumber, cut into small cubes
  • 1 cup pineapple, diced
  • 3 tablespoons fresh coriander, finely chopped
  • 6 lemons, just the juice
  • 3 tablespoons olive oil
  • to taste salt and pepper

Preparation

Blanch the cauliflower in boiling salted water until smooth. Go through cold water to cut the cooking and drain.
In a bowl, place the cauliflower, watermelon, jicama, serrano pepper, cucumber, pineapple, coriander, add lemon juice, olive oil, salt and pepper, refrigerate for 20 minutes.
Enjoy with some toasts.

TIPS

If it is season, you can substitute pineapple for mango.
