Ingredients

4 portions
  • 1/2 cups Water
  • 4 cups Cauliflower Eva® Bits, 454 g
  • 6 guajillo chilies, without tail, without seeds
  • 3 chile de árbol peppers, without tail, without seeds
  • 1/4 onions
  • 1 clove garlic, without skin
  • 1 cup cornmeal
  • to taste salt
  • to taste black pepper
  • enough Nopal Salad, To accompany

Preparation

Pour the Cauliflower Eva® Bits into a pot of hot water. Cook for 4 minutes, drain and cool down under the stream of cold water. Remove excess water with the help of a cotton cloth. Reserve until use.
Blend the chilies together with the onion and garlic until obtaining a thick mixture, if necessary remove a little of the soaking water. Strain and reserve the pulp.
Place the Cauliflower Eva® Bits in a bowl, pour the pulp of the chilies, the corn flour, salt and pepper and integrate, with the help of your hands form balls with the dough and reserve
In a tortilla press, place a plastic and press the ball to form the tortilla.
On a comal over medium heat, cook the tortilla on both sides until lightly golden brown.
Accompany your tortillas with a cactus salad.

You can substitute cornmeal for wheat flour.
