Ingredients

4 portions
  • 2 cups jocoque
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups coriander
  • 2 tablespoons lime juice, without seeds
  • salt
  • pepper
  • 6 branches celery, without leaves
  • 1 tablespoon peanut, roasted and chopped
  • 1 tablespoon black sesame seed

Preparation

In a bowl mix the jocoque together with the garlic, coriander, lemon juice, salt and pepper to taste until completely integrated. Reserve in refrigeration until use.
With the help of a potato peeler, remove the first fiber from the celery. Then, on a board, cut the branches into canes approximately 8 centimeters long. Remember that the wider the branches, the wider the gap in the middle.
Fill the celery holes with the jocoque dressing, sprinkle with chopped peanuts and black sesame.

PRESENTATION

Serve on a platter.

TIPS

If you don't have peanuts, you can use amaranth, cranberry, or tree nuts to give the celery sticks a sweet flavor.
