Prepare this original recipe, a chayote carpaccio, accompanied by a fresh basil and mint dressing, accompanied by strips of pumpkin, chilli powder, wheat germ, will become your favorite entree. This easy recipe is ideal for a ketogenic diet, as it only has 161 kcal.

Ingredients

4 portions
  • 4 chayotes
  • to taste salt
  • 1/2 cups basil, for the dressing
  • 1/2 cups peppermint, for the dressing
  • 1/4 cups lemon juice, for the dressing
  • 1/4 cups olive oil, for the dressing
  • 1/2 cups pumpkin, sliced
  • 1 teaspoon chili powder, to decorate
  • enough alfalfa germ, to decorate
  • enough edible flower, to decorate

Preparation

On a board, peel the chayotes, cut into slices ½ cm thick. Reservation
In a pot with water, cook the chayotes for 5 minutes, remove from the heat and drain. Reservation.
In a processor add the basil, mint, lemon juice and olive oil, process for 3 minutes. Reservation
On a plate place the chayote slices, season with salt, add the pumpkin slices, the basil and mint dressing, season with the chili powder, decorate with alfalfa germ and edible flowers. Enjoy!

PRESENTATION

In an extended plate, accompanied by a refreshing drink.

TIPS

You can substitute the pumpkin slices for eggplant slices.
