Preparation
Chop the onion, the carrot and the garlic clove very finely. In a casserole with olive oil, sauté over medium heat until the vegetables soften. Add the spinach and let them cook with the spices and once they start cooking, cover them with water.
Cook for 10 minutes over low heat and at that time add the drained chickpeas from the preserves. If necessary add a little water until just cover the ingredients.
We add salt and cook for 5 minutes over low heat. Once the stew is cooked, before serving, place the casserole out of the heat and cover for 5 minutes so that the aromas and flavors intermingle. We serve hot.
