Ingredients

4 servings
  • 2 cups of Brussels sprouts
  • 2 spoonfuls of olive oil
  • 1 yellow lemon
  • 3 pinches of coarse salt
  • 2 pinches of White pepper
  • 2 cups of couscous Cooked
  • 2 cups of baby spinach
  • 2 avocados in sheets
  • 1 teaspoonful of Apple vinager for mayonnaise
  • 1 teaspoonful of lemon juice for mayonnaise
  • 3 teaspoons of fine herbs for mayonnaise
  • 1/2 Cup of soy milk for mayonnaise
  • 1/2 teaspoonful of Salt
  • 1/4 of teaspoonful of black pepper
  • 1 Cup of sunflower oil for mayonnaise

Preparation

Preheat the oven to 180 ° C.
In a bowl, mix Brussels sprouts with olive oil, lemon juice, salt and pepper.
Place on a baking tray and bake for 20 to 25 minutes or until cooked and colored. Flip from time to time.
Form the bowl, placing a little couscous, spinach, avocado slices and brussel sprouts, reserve.
For mayonnaise, liquefy apple cider vinegar with lemon juice, fine herbs, soy milk, salt and pepper. Add the sunflower oil in the form of yarn without stopping the blender.
Accompany the bowl with the mayonnaise of fine herbs.

TIPS
