Are you running late and want to surprise that special someone with a surprising dish? This Quinoa and pumpkin pie with pico de gallo will save you a lot of time and a lot of calories since the base of the cake is not made with normal dough. Do not miss this recipe and surprise yourself preparing it, you will not believe how easy it is to make and how delicious it is both in flavor and texture.

Ingredients

7 portions
  • 6 green zucchini
  • 1 bunch asparagus
  • 5 units egg white
  • 500 grams quinoa
  • 4 cups Water
  • 1 red onion
  • 1 can black bean, Cooked
  • 1/2 cups serrano pepper
  • 1 bunch fresh coriander
  • 500 grams tomato
  • 2 avocados
  • 1/3 cups olive oil
  • 1 bunch fine herbs
  • 1 teaspoon ground pepper
  • 2 teaspoons salt

Preparation

Soak the quinoa in cold water for approximately 30 minutes, after time drain and reserve.
Cook the quinoa in water for approximately 45 minutes.
We cut the pumpkin and the asparagus into quarters into thin slices, mix them by adding egg whites, salt and pepper. all this is placed in a cake tin and bake for 25 minutes at 180 °.
For the pico de gallo, cut the tomato into small cubes, removing the seeds, cut the red onion into a thin feather, cut the chili into very thin slices and finely chop the coriander. We mix all this in a bowl and add olive oil and beans.
Once the quinoa is cooked, remove it from the pan and let it cool, then mix with the pico de gallo and rectify the seasoning.
Once the base of the cake is cooked, we add the quinoa and pico de gallo in it, flatten it and distribute it, giving it shape.
Cut the avocado into thin slices, cover the cake and shine with olive oil. We decorate with fine herbs.

PRESENTATION

Accompany this delicious cake with some baked toast.

TIPS

Cut the avocado just at the time of adding it to your cake and immediately varnish it with olive oil so that it does not oxidize so quickly.
