7 portions
  • 3 bananas, green
  • 1/2 red peppers
  • 1/2 onions
  • 2 tomatoes
  • 2 tablespoons butter
  • to taste chives
  • to taste fresh coriander
  • 1/4 cups achiote, liquid
  • 1/2 cups Red wine
  • 1 clove garlic
  • to taste salt and pepper

Wash the bananas very well with the help of a brush to eliminate as much as possible all the stains of the shell or shell.
Remove the tips and remove the shell from each one. Place the shells in a pot of boiling water until they soften.
In a container grate the green bananas without shell, add salt to taste, to that grated zest and reserve to use later in the recipe. In another container, grate the onion and garlic (also serve by grinding). Apart we finely chop the bell pepper, green onions and tomatoes.
Once you have the soft banana shells, undo them as if it were meat. You can do it with the help of a fork, but it is very easy with your hand.
Place a large skillet over medium heat, add the butter, sauté the grated onion and garlic. Until they crystallize without letting burn. Add the rest of the ingredients, except the grated bananas. And let cook for about 30 minutes until all the flavors are incorporated.
Finally, in another pan with plenty of oil to fry, take the grated bananas and form with your hand small tortillas or croquettes pressing with the center of the palm of your hand. Fry until brown on both sides.

Serve with a green salad or steamed vegetables.
