Ingredients

4 portions
  • 2 cups ground beef, beef stuffing
  • 1/4 cups cambray onion, sliced, including tail, for stuffing
  • 1 tablespoon ginger, grated for filling
  • 1/2 cups carrot, grated for filling
  • 1/2 cups pumpkin, grated for filling
  • 1/2 cups red bell pepper, finely chopped for filling
  • 1/2 cups Broccoli Eva® Bits, for the filling
  • 1/4 cups cashews, chopped for stuffing
  • 1 tablespoon garlic powder
  • 3 tablespoons rice vinegar, for the filling
  • 1/4 cups soy sauce, for the filling
  • 2 tablespoons sesame oil, for the filling
  • 2 tablespoons raw sugar, for the filling
  • 1 tablespoon cornstarch, for the filling
  • 1/4 cups beef broth, for the filling
  • to taste salt, for the filling
  • to taste black pepper, for the filling
  • 2 tablespoons sesame oil, for the filling
  • 1/2 cups soy sauce, for the sauce
  • 1 tablespoon sesame oil, for the sauce
  • 1 serrano pepper, finely chopped for the sauce
  • 1 tablespoon chives, finely chopped for the sauce
  • leaves Romaine Eva® Mini Lettuce, 4 pieces

Preparation

For the filling, in a bowl mix the ground beef, the chambray onion, the ginger, the carrot, the pumpkin, the bell pepper, the broccoli bits Eva®, the cashew nut, the garlic, the rice vinegar, soy sauce, sesame oil, muscovado sugar, cornstarch and beef broth; Season with salt and pepper until completely integrated.
In a saucepan over low heat, heat the sesame oil and cook the covered mixture for 15 minutes, or until the meat is cooked. Cool and reserve.
For the sauce, mix the soy sauce, sesame oil, serrano pepper and chives. Reservation.
Place an Eva® Mini Romaine lettuce leaf, add the ground beef stuffing and place another Eva® Mini Romaine lettuce leaf on top, tie with the help of a piece of chives. Accommodates on an extended plate. Garnish with black sesame and praline sesame and accompany with soy sauce.

PRESENTATION

Serve on an extended plate, decorate with black and white sesame seeds; Accompany with soy sauce.

TIPS

If when it comes to tie the lettuce with the scallion it breaks, let it soak a few minutes in hot water, to make it more flexible.
