Nopal Taquitos Stuffed with Cottage Cheese

Enjoy these cactus taquitos stuffed with cottage cheese with a delicious tomato sauce, the combination of ingredients you will love. Best of all, it is very healthy because of its high fiber content, low sugar and only 30 kcal per serving.

Ingredients

5 portions
  • 5 nopales cambray
  • to taste salt
  • 1 teaspoon baking soda
  • 2 tablespoons oil
  • 1/2 cups onion, finely chopped
  • 1 cup tomtato, cut into cubes
  • 3 serrano peppers, finely chopped
  • 2 cups curd
  • to taste salt and pepper
  • 3 tomatoes, for the sauce
  • 1/3 onions, for the sauce
  • 3 serrano peppers, for the sauce
  • 1 clove garlic, for the sauce
  • to taste fresh coriander, finely chopped

Preparation

In a pot with water cook the nopales with salt and baking soda, until they are cooked. Let cool and reserve.
In a pan over medium heat heat the oil, add the onion, the tomato, the serrano pepper and cook until they change slightly in color, add the cottage cheese, season with salt and pepper, cook for 5 minutes. Reservation.
On a small board fill the nopales with cottage cheese and close with small skewers. Reservation.
For the sauce, in a comal roast the tomatoes, the onion, the chile serrano and the garlic.
Blend the above, season with salt.
Serve the previous sauce on a plate and place the taquitos of nopales on top, decorate with cilantro.

PRESENTATION

On an extended plate accompanied by the red salsita, and a refreshing drink.

TIPS

The nopales slime decreases when adding bicarbonate.
