Preparation
In a deep bowl beat the eggs and milk. Season with salt and pepper to taste.
In another deep bowl mix the cherry tomato sliced in halves, the cubed cheese, the purple onion, the basil and the olive oil.
Heat a small skillet not sticky to medium heat and spray with vegetable spray.
Put 1/4 of the mixture of the eggs in the pan to cook for 1 minute. Add 2-3 tablespoons of the stuffing and spread on only one half of the egg.
Fold the other half of the egg over the stuffing and continue cooking for 3-4 minutes or until cooked.
Remove from the pan and repeat for the other 4 omelettes.
