The omelette caprese is a very rich and nutritious recipe to start the day. Since it is filled with a caprese salad with a touch of herbs. It is delicious and healthy.

Ingredients

4 portions
  • 8 eggs
  • 1/2 cups milk
  • 2 cups cherry tomato
  • 1 cup fresh mozzarella cheese
  • 1/2 red onions, chopped
  • 4 tablespoons basil
  • 2 tablespoons olive oil
  • to taste black pepper, to taste

Preparation

In a deep bowl beat the eggs and milk. Season with salt and pepper to taste.
In another deep bowl mix the cherry tomato sliced ​​in halves, the cubed cheese, the purple onion, the basil and the olive oil.
Heat a small skillet not sticky to medium heat and spray with vegetable spray.
Put 1/4 of the mixture of the eggs in the pan to cook for 1 minute. Add 2-3 tablespoons of the stuffing and spread on only one half of the egg.
Fold the other half of the egg over the stuffing and continue cooking for 3-4 minutes or until cooked.
Remove from the pan and repeat for the other 4 omelettes.

PRESENTATION

Serve and decorate the saucer with a spoonful of the caprese filling. Accompany with toasted bread, Greek olives and fresh cheese.

TIPS

You can add red and yellow peppers to the filling to have another version of the omelet.
