Peel the pears in half while preserving the stem but removing the center. Squeeze lemon juice on the pears to prevent them from turning black.
Serve water in a pot ready to boil. Cut the vanilla pod in half but along and add to the pot along with the brown sugar and the mint leaves. Let it boil. Remember to leave some mint leaves for the nut mixture.
When it reaches the boiling point, place the cooking rack with the pears. Cover the pot and let the fruit cook for about 15 to 17 minutes. Let them cool.
Chop the nuts and mix with the cottage cheese and some mint leaves. Mix to integrate the ingredients completely.
Put the mixture of water and sugar back on low heat to reduce it between 6 to 7 minutes. The idea is to reach a thick consistency like syrup. When finished, remember to strain it and let it cool until it reaches a warm temperature.
Serve a half pear per serving. Bathe with the syrup and then add the mixture of cottage cheese, mint and walnuts.
