Nutritious and delicious pumpkin rolls filled with ricotta cheese with pumpkin flower, elotitos, dehydrated tomato, parsley, in a tomato sauce and a touch of flavor of basil, oregano and thyme. Very easy to prepare.

Ingredients

6 servings
  • 1/2 Cup of White onion finely chopped, for filling
  • 1 tablespoon of garlic Finely chopped, for filling
  • 2 cups of ricotta cheese for the filling
  • 1/4 of Cup of parsley Finely chopped, for filling
  • 1 Cup of squash blossom chopped, for the filling
  • 1/4 of Cup of baby corn for the filling
  • 1/4 of Cup of dehydrated tomato Finely chopped, for filling
  • 1 pinch of Salt for the filling
  • 1 pinch of black pepper for the filling
  • 2 pieces of pumpkin cut into sheets of 1/2 cm
  • 1/4 of Cup of White onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 2 cups of tomato puree
  • 1/4 of Cup of Parmesan cheese to grill
  • 1/2 Cup of basil
  • 1 pinch of oregano
  • 1/4 of Cup of cherry tomato Cut in half
  • 1 pinch of thyme

    Preparation

    Preheat the oven to 200 ° C.
    Mix in a bowl the ingredients for the filling and season to your liking.
    Fill the pumpkins with the previous preparation.
    Mix the tomato puree with onion and garlic, serve the base puree in a baking dish, place the stuffed pumpkins, sprinkle with Parmesan cheese, fresh basil leaves, oregano, cherry tomatoes and thyme.
    Bake for 10 minutes. Enjoy
