Ingredients

4 portions
  • 2 kilos eggplant, 4 units
  • 500 grams pumpkin, 3 units
  • 500 grams green zucchini, round, 3 units
  • 500 grams Castilla pumpkin
  • 800 grams fresh cheese
  • 4 chicken breasts
  • basil
  • minced garlics
  • salt
  • nutmegs

Preparation

Cut the aubergines in halves and hollow out.
Boil pumpkins for 10 minutes. Once cooked, cut them into small cubes and season them with the ground garlic and salt to taste.
Place the vegetable filling inside the aubergines.
Cook the breasts on a griddle.

PRESENTATION

To place a slice of cheese (100 grams) on each part and a leaf of basil to accompany with a breast of chicken.

TIPS

Preheat the oven for 5 minutes.
