Ingredients

4 portions
  • 600 grams rib eye, in steaks
  • salt, and pepper
  • 100 grams poblano pepper
  • 50 grams Portobello mushroom
  • 100 grams bacon, chopped
  • 100 grams onion, filleted
  • 25 grams serrano pepper, filleted
  • 400 grams bean, green
  • oregano
  • 15 grams fresh coriander
  • 100 grams Cherry tomato
  • 200 grams goat cheese, (any fresh cheese)
  • 25 milliliters balsamic vinegar
  • 100 milliliters extra virgin olive oil
  • salt, and pepper
  • 200 grams lettuce, (variety)
  • 50 grams mushroom, filleted

Preparation

Season the meat and reserve.
For the filling: Sauté the mushroom, chile serrano, onion and bacon and season to taste. Let cool.
Fill the steaks and wrap, you can fix with a toothpick.
Seal the rolls in a pan with a little olive oil.
Wrap the rolls in a sheet of lettuce each and reserve.
Mix the vegetables in a bowl, garnish with olive oil, vinegar, salt and pepper to accompany the rolls.
