Sauté the onion, garlic, tomato, guajillo chiles, and ancho chiles in a skillet with a little oil for 3 minutes. Add salt, pepper, and chicken broth and cook for 5 minutes. Blend until you obtain a smooth adobo. Place the pressed chicharrón in another pan, pour in the adobo, and cook for 5 minutes or until well cooked. Adjust the seasoning and let cool. Take a portion of dough, form a ball, hollow it out, and fill it with the chicharrón. Flatten the gordita with a tortilla press. Cook the gorditas in a skillet with a little lard for 3 minutes on each side or until well cooked. Decorate the Christmas chicharrón gorditas with cream, cheese, and cilantro leaves.
