Ingredients: 500 grams hominy corn, precooked; 500 grams medium-sized shrimp, raw; 250 grams pork, meaty; 4 cloves garlic; 1/4 onions; 2 liters water; 8 tomatillos, for the green sauce; 2 serrano chiles, serrano; 5 sprigs fresh cilantro; 2 sprigs fresh epazote; 250 grams onion, finely chopped, for garnish; 5 limes, cut into quarters; 200 grams Romaine lettuce, finely filleted; 200 grams radish, finely sliced; 2 avocados, cut into thin wedges; 150 grams pork rinds, in pieces

Cook the corn with water, garlic, onion, and pork meat for 20 minutes in a pressure cooker until the corn is soft and burst. Blend the tomatoes, serrano chili, cilantro, and epazote with a bit of the cooking liquid from the corn, add to the corn cooking, season with salt and pepper, and cook for 20 more minutes. In the last 5 minutes of cooking, add the shrimp so they don’t overcook.
