Ingredients: 1/2 cups cream cheese; 1 cup sour cream; 1 cup Manchego cheese, grated; salt; pepper; 1 cup whole milk; 2 tablespoons butter; 1 cup onion, in thin strips; 2 cups chicken breast, in medium cubes or thin strips; salt; pepper; 2 cups Poblano chile, roasted, cleaned, and in thin strips; 1 cup yellow corn, shredded

Place the cream cheese, cream, and manchego cheese in a blender, then season with salt and pepper. When you start blending, add the milk gradually, depending on the thickness you desire. Set aside. Heat the butter in a skillet over medium heat, add the onion, and cook for 2 minutes or until it slightly changes color. Add the chicken, season with salt and pepper, and cook for 5 to 7 minutes. Finally, add the rajas, yellow corn, the blended creamy sauce, and cook for 5 more minutes.
