In a skillet over medium heat, heat the vegetable oil. Add the garlic and onion and cook for 3 minutes or until the onion is transparent. Add the mushrooms and strips and cook for 5 more minutes. When the strips are soft, add the tomato and cook until it releases its juice and is soft. Season with salt and pepper.
