Wash and dry the zucchinis, and cut each one into 2 thick slices, 2 per zucchini. Boil them with salt for 10 minutes or until they are soft but not overcooked. Beat the egg whites of 3 eggs with a hand mixer until they form stiff peaks, then add the yolks and continue beating for half a minute.
