Preheat the oven to 290 °C. For the marinade: grind the chiles, pepper, cumin, salt, and water in the blender until you obtain a homogeneous mixture. Then, pour it into a large bowl, add the pork and chicken, ensuring they are well coated with the marinade. Let it rest for a couple of hours so that the meat absorbs the marinade's flavor.
