Heat the olive oil in a frying pan over medium heat, add the garlic, potatoes, salt, oregano, and pepper. Cover and cook for 20 minutes. In a bowl, mash the potatoes with the garlic, double cream cheese, York ham, and flour. Season if necessary and add the parsley and eggs. Mix with a wooden spoon.
