Place the chestnuts on a comal and toast for 10 minutes over medium heat or until the skin separates, peel the chestnuts and cook for 15 minutes or until soft. Grind the rose petals in a molcajete until you have a powder, add the anise and set aside. Grind the chestnuts along with the pitaya in the same way and set aside. Strain everything and set aside. Melt the butter in a skillet over medium heat, add the garlic and cook for 2 minutes or until lightly browned. Then, add the petals, walnut, cornstarch, chicken broth, anise, and honey. Cook the rose sauce for 5 more minutes. For the quail: place the quail on a board, tie the legs with hemp thread, set aside. Melt the butter in a skillet over medium heat, add the quails and season with salt and pepper. Brown on both sides for 15 minutes over medium heat. Remove from heat when the quail is well cooked. Serve the quail in rose sauce, drizzle with more sauce, and garnish with rose petals.
