Place the chestnuts on a comal and toast for 10 minutes over medium heat or until the skin separates, peel the chestnuts and cook for 15 minutes or until soft. Grind the rose petals in a molcajete until you have a powder, add the anise and set aside. Grind the chestnuts along with the pitaya in the same way and set aside. Strain everything and set aside.
